Il Gargano non finisce mai di stupirti
Questo weekend sono stata a Rodi Garganico in occasione della 35′ sagra delle arance ospite della Proloco di Rodi Garganico e del Consorzio di tutela Arancia del Gargano IGP e Limone del Gargano IGP.
Una due giorni fantastica immersa tra il profumo delle zagare, in questo borgo arroccato sul Parco del Gargano tra ulivi, casolari antichi, agrumi, monasteri il tutto incorniciato dal blu del mare e più in là, le sagome delle isole tremiti . L’emozione era talmente alta da non saper più dove fossi, in costiera amalfitana o sul Gargano?
Ho contribuito a questo splendido evento realizzando un percorso puramente olfattivo per far ri-conoscere i profumi degli agrumi ma anche i profumi delle diverse parti della pianta.
L’evento si è svolto in una splendida villa in località Mascherizzo, immersi nel profumo di zagare, tra piante di agrumi, un quadro più consono non poteva capitarmi. A coronare questa cornice paradisiaca, un sax e una colazione a base di arance realizzata magistralmente dall’associazione cuochi di capitanata.
Il percorso sensoriale per descrivere gli oli che si possono estrarre dagli agrumi: il legno di cedro,
ricavato dal Cedrus atlantica, una pianta della famiglia delle Pinaceae per distillazione in corrente di vapore, il petitgrain che deriva dalla distillazione delle foglie dell’arancio amaro, l’olio essenziale delle zagare che, a differenza dei fiori di zagare che danno il nome a tutti fiori delle piante agrumate, l’olio essenziale deriva per
enflorage solo dai fiori di arancia amara, un metodo perfetto per estrarre le essenze dai fiori, tuttavia è molto lungo e ha una resa molto bassa, per questi motivi è davvero raro trovarne. L’olio di neroli invece si ottiene ugualmente dai fiori di zagare di arancio amaro ma con il metodo di distillazione in corrente di vapore
In entrambi i casi , neroli e zagare, parliamo di oli essenziali piuttosto costosi in quanto la resa in termini di essenza è dello 0,1% in peso. E’ per questo motivo che gli oli essenziale di zagara e di neroli sono molto costosi.
Siamo passati poi a riconoscere la differenza tra arancio amaro e dolce, mandarino rosso e verde, bergamotto e limone.
Il percorso olfattivo è stato molto apprezzata sia dagli adulti che dai bambini con i quali mi sono divertita anche io.
Al termine una breve introduzione alla profumeria naturale e , attraverso i profumi abbiamo fatto il viaggio sensoriale tra i borghi del Gargano, qui si dovevano riconoscere le essenze contenute nei profumi di Vieste, Rodi, Peschici, Monte Sant’Angelo, San Giovanni Rotondo, Varano, Tremiti, Incoronata !
I profumi sono in vendita in confezione da 50 ml spray al costo di 20.00 euro.
